Healthy Spring Rolls

The weather’s warming up, which means we’re seeing more seasonal colors—both outside and on our plates. Spring rolls wrapped in translucent rice paper (available at Asian markets and Whole Foods) are the perfect way to show off a rainbow of in-season produce. Just grab an assortment of vibrant fruits and veggies, add a little protein, and bam—you’ve got an eye-catching (and wholesome) lunch, dinner, or snack option. Tropical Kiwi Strawberry Spring Rolls
These spring rolls combine an array of tropical fruits (like kiwi and mango) with a bit of fresh mint. For that little extra somethin’-somethin’, we definitely recommend mixing up the vanilla lime honey dipping sauce. Yum!

Fresh Sweet Potato Spring Rolls
Sweet potatoes, baby spinach, and bean sprouts are just a few of the yummy ingredients in these rolls. If you want to kick the flavor up a notch further, add one of the optional extras like pumpkin seeds, raisins, chopped onions, or fresh mint.
